Black Beans

Yields: 8 cups

Ingredients:

    • 1-16 oz package dried black beans
    • 6 cups water
  • Soak beans overnight or boil for 2 minutes and set aside for 1 hour.
  • Simmer beans covered for 30 minutes, skimming off any foam.
  • Saute in large skillet over medium-high heat 10 minutes:
    • 5 slices bacon, chopped
    • 2 green bell peppers, chopped
    • 2 medium onions, chopped
    • 4 garlic cloves, minced
  • Add onion mixture and simmer uncovered for 30 minutes, stirring occasionally.
  • Add:
    • 1 tsp dried oregano
    • 1 tsp ground cumin
    • 3 bay leaves
  • simmer uncovered for 30 minutes, stirring occasionally.
  • Discard bay leaves
  • Stir in:
    • 1/4 cup olive oil optional
    • 1 TBSP red wine or apple cider vinegar
    • Pinch red pepper flakes
    • 4 teaspoons sugar
    • 3/4 tsp salt
    • 1/4 tsp pepper
  • Cool and chill up to 2 days
  • Cook over medium heat, stirring often, until thoroughly heated. (I heated in the crock pot.)
  • Serve with :
    • sour cream
    • chopped green onion
